"A recipe traditionally used for our Sicilian Seven Fishes dinner on Christmas eve but somehow we end up making it a lot more often. My father-in-law, who rarely offers up compliments cleaned his plate clean of this and then asked me what gave it that unique breading. When I told him it was Ritz crackers, he just had to know the recipe. Once that happened, I knew I had a hit that needed to be shared."

  1. Directions:
  2. Preheat oven to 400F.
  3. Place scallops in a bowl, season with salt and pepper, add thyme and heavy cream; toss in a bowl to coat generously.
  4. Place scallops, with heavy cream, evenly in the bottom of an oven proof dish, sprinkle with cracker crumbs and top with melted butter and Old Bay (if desired)
  5. Bake for 20 minutes, squeeze lemon over scallops and serve immediately. Add additional crackers for a crunchier topping for garnish if you prefer.
