  1. Wash ginger and cut into 1/2 inch chunks. Place in blender and fill blender the rest of the way with water. Blend until you have a thick, pasty liquid.
  2. Strain blender contents through a mesh strainer into a 1/2 gallon pitcher. Squeeze strainer contents to extract as much ginger juice as possible.
  3. Add lemon juice. Mixture in pitcher will turn pink!
  4. Add sugar. Stir until sugar is dissolved.
  5. Fill pitcher the rest of the way with water. Stir. Taste and adjust sugar if necessary.
  6. Serve garnished with crushed mint leaves.
