Grilled Vegetable Quiche


"I threw together this savory quiche when I was missing some key ingredients in a spinach quiche recipe on this site. I added the only vegetables I had on hand: a frozen grilled vegetable medley, some spinach and mushrooms and it was a hit! The feta cheese mingles with the grilled vegetable medley to make it SO delicious. Can be vegetarian or add cooked chicken."

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place frozen grilled eggplant and zucchini in a microwave bowl and cover. Cook 4 minutes on high. Remove and drain off sauce in a strainer. Chop vegetables into smaller pieces and set aside. This should yield about 2 cups.
  3. In a medium skillet, melt butter over medium heat. Saute mushrooms in butter until lightly browned, add spinach, cook until wilted. about 2 minutes. Stir in drained grilled vegetables, chicken, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.
  4. In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with vegetable mixture.
  5. Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.
