"I make a big batch to keep in the refrigerator for a quick meal or side. This is very tasty, healthy, low fat, and filling. I am a meat-lover and this veggie-only soup leaves nothing to be desired. What more could you ask for!?"
In a large pot on the stove top, heat potatoes, carrots, and celery in beef broth over medium heat until they begin to become tender, about 15 minutes. Thoroughly rinse and drain black beans and add to broth with remaining vegetables and condensed tomato soup (no water), and spices. Heat on medium-low for 30 minutes, stirring occasionally. Other vegetables can be added according to preference.
