  1. Generously season pork chops with salt and pepper. Dust lightly with flour on both sides.
  2. Heat large saute pan over medium high heat. Add Oil.
  3. Brown pork chops on each side, about 5 minutes per side.
  4. Turn heat down to medium, add the shallots* around the chops; continue cooking, flipping once, until fork tender, approximately 10-15 minutes, stirring occasionally so shallots don't burn.
  5. Remove chops only and set aside/keep warm.
  6. Turn heat back up to medium high and add juice and wine. Reduce down until a glazy consistency, about 3-5 minutes.
  7. Reduce heat to a slight simmer. Return chops to pan, along with zest and butter. Stir and flip until chops are glazed. Serve.
