Preheat oven to 350 degrees. In a medium saucepan, heat peanut butter, brown sugar and oil until smooth. Turn off heat and add coconut, vanilla, chocolate powder, chocolate chips, and protein powder, combine until chocolate is melted and everything is incorporated. Beat egg in separate bowl and combine with chocolate mixture. Add remaining ingredients until mixture is thoroughly mixed.
In a greased 9 x 13 pan, dump in mixture and squish down with hand until mixture is flat. Place in oven and bake for about 20 minutes or until the top of bars no longer look wet. For me it was about 16 minutes.
Remove from oven and let cool for a few minutes. Then take a pizza cutter and cut to desired size. I bag mine up and put them in the freezer to ensure optimum freshness.
