  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Sift the flour, ginger, baking soda, cinnamon,allspice and salt into a mixing bowl. Stir the mixture to make sure everything is evenly distributed.
  3. Place the butter and sugar into a mixing bowl and mix until creamy.
  4. Beat in the egg, and dark molasses.
  5. Slowly add the flour mixture into the wet ingredients until just blended, if adding the crystalized ginger add it when the mixture is almost complete as you don't want to break-up the pieces.
  6. Take rounded one teaspoon sized amounts of dough and roll into small balls between your hands, place 2 inches apart on an ungreased baking sheet.
  7. Bake in preheated oven until the tops are rounded and slightly cracked, about 10 minutes.
  8. Cool cookies on a wire rack. These will last longer in an airtight container.
