  1. In a mixing bowl combine all dry ingredients.
  2. Place even amount of rub on the fat side of the brisket.
  3. Wrap brisket in plastic wrap and store in refrigerator overnight.
  4. 20 minutes before cooking remove brisket from refrigerator and let come to room temperature.
  5. Prepare your smoker according to the directions.
  6. Add brisket to smoker, and bring the smokers temperature up to 215 to 220 degrees.
  7. Cook brisket for about 2 to 2 1/2 hours.
  8. Remove brisket from smoker and wrap in aluminum foil, and place back in the smoker.
  9. Continue cooking brisket for the next 4 to 5 hours at 215 to 220 degrees.
  10. Once finsihed carefully remove the brisket from the smoker making sure not to puncture the aluminum foil as there will be a lot of juices.
  11. Allow the brisket to rest in the foil and juices for 15 minutes before cutting.
