  1. Preparing Ribs:
  2. Remove ribs from package.
  3. Turn ribs over onto their meat side.
  4. With a small knife make a small cut into the fatty tissue from one end of the ribs to the other.
  5. Remove the fatty tissue by sticking your fingers into the cut, and pulling off the tissue.
  6. Cut the rack of ribs in half, and place into plastic container.
  7. Pour the liquid and dry ingredients into the plastic container, cover, and store in refrigerator for 1 day.
  8. The following day remove ribs from the refrigerator and let sit at room temperature for about 20 minutes.
  9. Prepare smoker according to your smokers directions.
  10. For the best smoke use Jack Daniels Wood Smoking Chips. Allow chips to soak in water about 20 minutes before placing in smoker.
  11. Place ribs in smoker, and bring temperature to 215 to 220 degrees.
  12. For the next 4 hours add soaked wood chips as needed making sure the temperature stays between 215 to 220 degrees.
  13. After 4 hours remove ribs from smoker and wrap in aluminum foil, and place a small amount of Jack Daniels BBQ sauce on the top of the ribs.
  14. Place aluminum foil wrapped ribs back into smoker and continue cooking for about 1/2 hour more.
  15. Remove ribs from smoker and allow ribs to sit for 15 minutes before serving to allow the juices to finish the cooking process.
