Original recipe yields 8 servings

  1. In a large pot bring water to boil, and then add corn, and cook for 10 minutes.
  2. Remove corn from water, and let cool.
  3. Once corn is cool, stand the cob up, and use a knife slicing down the cob to remove the corn from the husk.
  4. Place corn into large mixing bowl.
  5. Dice peppers and onion and then place in mixing bowl with corn.
  6. In a mixing bowl, combine oil and vinegar and then pour over vegetables.
  7. Mix thoroughly to ensure vegetables are covered. Salt and pepper to taste.
  8. Cover and chill.
  9. Bring to room temperature before serving.
