  1. Cook: heat oil in lg nonstick skillet. Add chicken, sauté until lightly browned (about 4 minutes). Remove chicken and set it aside. Add onion and sauté until softened (about 5 minutes).
  2. Add stock; bring to boil. Return chicken to pan and add next 6 ingredients plus 1/2 tsp salt and 1/2 tsp pepper. Bring to boil, cover, simmer until chicken is cooked through, about 15 minutes.
  3. To serve: spoon a portion of the curry onto each plate. Serve over rice. Garnish with onions, bananas, raisins, chutney, tomatoes, peanuts.
