"I made this quick and easy frittata with leftover sausages and potatoes from dinner. You can use anything! These measurements are my best guess from my latest creation. Just use your judgement with the milk and spices. So don't throw out your extra veggies, roasted potatoes or meat from dinner. Throw them in, get creative and enjoy!"

  1. Preheat oven to 350 degrees. Lightly grease an oven-safe skillet with butter or Pam cooking spray. Heat leftovers in skillet over medium heat for a few minutes. Beat together the eggs, milk, salt, pepper, green onion and most of the cheese. Add to skillet. Top with some remaining grated cheese and paprika. Cook on the stove top for 5-6 minutes to allow eggs to set. Place the skillet in the preheated oven uncovered for 5-10 min until done and edges have begun to brown or knife inserted comes out clean.
