"This delicious meatloaf is made with mushrooms, onions, and garlic. Then topped with a thick beef and mushroom gravy. I have never cared much for meatloaf but I absolutely love this version I have created with no ketchup."
Preheat oven to 350°. In 2 tbl spoons butter over med-high heat, sautee yellow onion, garlic, mushrooms and only the thick white ends of green onion (set aside green part). Dash a little salt into mixture. Sautee until tender. Drain remaining liquid from pan.
In large bowl combine groundbeef, breadcrumbs, eggs, reserved green onion, salt, pepper, 3/4 cup cream of mushroom soup & sauteed mixture. Press groundbeef mixture into loaf pan to form shape. Use knife to loosen edges from pan and drop loaf into a tin foil lined casserole dish.
Bake for 1 hour and 45 minutes. Or until temperature reaches 170°. With 10-15 minutes before loaf is done prepare both gravy envelopes as instructed on package. Once gravy has thickened add remaining cream of mushroom soup. Whisk well. Let simmer on low, whisking occasionaly. Remove meatloaf when done. Serve with generous amounts of gravy.
