  1. Combine the onion and butter in a microwave safe casserole dish. Cover and microwave on High for 2 minutes.
  2. Stir in flour until smooth.
  3. Stir in sherry, salt and pepper, nutmeg and mushrooms.
  4. Cook, covered on high, 4-5 minutes or until tender. Let cool slightly.
  5. Transfer ½ cup of mushroom mixture to food processor, and process until smooth.
  6. Combine with reserved mushroom mixture and walnuts. Cover and chill.
  7. Serve with apple slices, pear slices, grapes and crackers.
