  1. Preheat oven to 350 degrees.
  2. Heat a medium-sized skillet over medium heat.
  3. Add the oil, butter, and onion.
  4. Stir occasionally until onions are translucent, about 5 minutes.
  5. Add the garlic, pepperoncini, and Proscuitto.
  6. Stir constantly for 2 minutes.
  7. Add the tomato and stir occasionally for 2 to 3 minutes.
  8. Add the breadcrumbs, remove from heat and stir until breadcrumbs are thoroughly mixed in and moistened.
  9. Add cup Parmesan and stir until incorporated. Firmly pack a generous tablespoon of the mixture into each mushroom.
  10. Sprinkle tops with remaining Parmesan.
  11. Bake for 20 minutes.
