  1. Preheat oven to 350 degrees. In a medium mixing bowl, cream butter, sugar and lemon juice.
  2. Add eggs to mixture, one at a time, beating well after each addition. In a seperate bowl combine flour, baking powder and salt.
  3. Add dry mixture to creamed mixture alternately with milk.
  4. Stir in coconut and lemon peel.
  5. Pour into two, greased, 8 X 4 loaf pans.
  6. Bake in preheated oven for 60 to 70 minutes. When toothpick is placed in the center of the bread it should come out clean.
  7. Cool 10 minutes remove from pan and place on wire rack to continue cooling.
