  1. Mix all, but the walnuts together in a bowl. The avocado is in lieu of mayo, but if you must have mayo, add about a TBSP. Season with salt and pepper. I used fresh Cilantro instead of salt. Now, line a whole wheat tortilla with lettuce or spinach or both. Place about 1/4 cup of mixture down the centre of the lettuce lined tortilla. Then coarsely chop some walnuts and sprinkle them along side of the chicken mixture. Fold over the tortilla, pulling back on the mixture as if you were going to form a cyclinder. Tuck in the sides and continue rolling until mixture is safely tucked inside. Now EAT!! **after working in a mexican restaurant, i learned that "nuking" the tortilla shell for 6-7 seconds, makes it much more pliable to work with**
