  1. 1. Heat onion in frying pan and fry onion until soft. Add lentils and fry gently for 3 minutes.
  2. 2. Stir in the broth, red wine, and sage. Bring to a boil. Cover and simmer gently for 20 minutes, stirring occasionally, until the lentils are tender. Add more liquid if necessary.
  3. 3. Meanwhile, in a small frying pan, gently fry the pearl onions with the butter and sugar for 5-7 minutes, until the sugar begins to caramelize and the onions are just tender. Stir occasionally.
  4. 4. Serve the lentils sprinkled with cashews and pearl onions.
