Original recipe yields 9 servings

  1. 1.Remove sausage from casing and brown then set aside
  2. 2.In the same frying pan, sautee the onions, peppers and then mushrooms in the remaining sausage drippings
  3. 3.Grease a 9x13 pan and layer hashbrowns on the bottom
  4. 4.Add salt/pepper and tex mex seasoning over hashbrowns
  5. 5.Layer chorizo over hashbrowns and then add the onions/peppers and mushrooms (and chilis if you choose).
  6. 6.In a bowl, mix 4 eggs with the milk & half/half and 1 tsp of dry mustard powder.
  7. 7.Pour egg mixture over the dish.
  8. 8.Layer with the cheese, cover and refrigerate overnight
  9. 9.Bake at 375 for 50 minutes until golden brown and bubbling.
  10. 10.Let cool for 10 minutes.
