Christmas Morning Wife Saver (Breakfast Casserole)


"I can't believe this has not been posted on AR yet! I certainly cannot take credit for this recipe but it is a Christmas classic; make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning and let it cook while you open gifts and sip your rum-spiked coffee!"

  1. In a 9 x 13 buttered baking dish, arrange 8 slices of bread (crusts removed) to cover the entire bottom. This may require cutting some of the slices to fit the shape of the container.
  2. Cover the bread with the cooked Canadian bacon slices (or ham)
  3. Lay slices of sharp cheddar on top of the Canadian Bacon.
  4. Lay remaining slices of bread on top and be sure to cover completely.
  5. In a bowl, beat 6 eggs together with salt and pepper.
  6. To eggs, add mustard powder, onion (minced), bell peppers (diced), Worcestershire sauce, hot sauce and milk. Mix well.
  7. Pour the egg mixture evenly over the bread layers. Cover and place in refrigerator overnight.
  8. In the morning, preheat oven to 350 degrees F.
  9. Melt 1/4 pound butter and pour evenly over the top of the bread layers.
  10. Sprinkle the crushed cornflakes evenly over the entire surface.
  11. Bake for one hour at 350 degrees F.
  12. Let stand for 10 minutes before serving.
