  1. Brine turkey 12-48 hours. Rinse well, and pat dry. Let air dry for 30 minutes.
  2. Pre heat oven to 300 F.
  3. Put 2 cups of stock in bottom of roaster. Place turkey on rack and roast, covered, for two hours. Baste regularly.
  4. After two hours,brush glaze over all of the bird. Return to oven covered. Continue roasting for appx 2 more hours, removing cover for the last 30 minutes.
  5. Let stand, covered, for 30 minutes before carving.
