2. Place chicken between two sheets of wax paper and pound thin.
3. In a bowl; mix cream cheese, chives, onion, 1 tsp garlic, and 3 tbsp Parmesan until well blended; spread onto chicken breasts. Starting at 1 short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
4. In a bowl; beat egg and mix in 1 tsp garlic. Mix remaining Parmesan, onion crisps, salt, and pepper in separate bowl. Dip prepared chicken, 1 at a time, in egg, then roll in crumb mixture. Place, seam-sides down, in lightly greased 13x9-inch baking dish.
5. Bake 30 min. or until chicken is no longer pink; 170 degrees F. Discard toothpicks. Sprinkle with chives; serve.
