  2. 1. Prepare Creamy Cilantro Pesto Dressing. Place all ingredients in food processor or blender. Cover and process until smooth. Refrigerate until ready to serve.
  3. 2. Heat oil in 10-inch skillet over medium- high heat. Season chicken with chili powder, salt, garlic, pepper then cook in oil 6 to 8 minutes, stirring occasionally, until no longer pink in center. Add tomato and beans and toss with the creamy cilantro pesto dressing, let cook for a few minutes to marinate the flavors together. Serve with white rice or pasta of your choice.
