"My family loves the flavor of gingerbread, but I get tired of making the same old thing. I had an easy recipe for chocolate truffles and adapted it to make these little gems."

  1. 1) Crush gingersnaps to a fine meal in food processor.
  2. 2) Place cream cheese into stand mixer and add ground ginger if using.
  3. 3) When spices are well mixed into cream cheese, slowly add gingersnap crumbs until the dough starts to pull away from the sides. It should be easy to roll into balls without falling apart.
  4. 4) Microwave chocolate coating according to package directions.
  5. 5) Roll dough into tsp sized balls and dip into chocolate coating. Let excess drip off and place onto waxed paper to dry.
  6. 6) Let the coating dry completely, store in a tightly covered container for up to 2 weeks
  8. If you wish, wrap the pieces of candied ginger in dough before coating in chocolate. Be warned, these will pack a punch but are ohhh so good!
