  1. 1. Preheat oven to 450 degrees F.
  2. 2. Cook sausage and pancetta in a large skillet over medium heat, about 5 minutes.
  3. 3. Add onion and peppers; cook until meats are browned and vegetables softened, about 5 to 8 minutes.
  4. Remove from heat.
  5. 4. Cut dough in half roll one piece into a 3/4-inch-thick rectangle. Put on a baking sheet lined with parchment paper; brush with 2 tbsp. oil (skip if sausage mixture is super oily already).
  6. 5. Spread mixture over dough, leaving a 34-inch border. Roll out the second piece of dough.
  7. 6. Moisten edges of bottom piece of dough with water. Place second dough piece over filling; crimp edges with a fork to seal. Brush with 2 tbsp. oil; cut a few steam vents in the center.
  8. Bake for 30 minutes, until golden.
  9. Serves 6 to 8.
