Original recipe yields 4 servings

  1. Hollandaise Sauce:
  2. In a small saucepan mix egg yolks and lemon juice. Place saucepan over low heat.
  3. Place ¼ cup of frozen butter into egg and lemon juice mixture, and stir constantly.
  4. Add another ¼ cup of frozen butter and continue stirring until sauce begins to thicken.
  5. Once sauce begins to stick to the wall of the saucepan remove from heat, and cover to keep warm for serving.
  6. Sauce will continue to thicken.
  7. Stir before serving.
  8. Egg Benedict Preparation:
  9. Split english muffin in half and place into toaster.
  10. While muffin is toasting, poach 2 eggs per person for 4 minutes.
  11. When english muffin is done place onto plate, nook side up.
  12. Lay a slice of prosciutto on top of each english muffin.
  13. When eggs are complete, place them on top of the prosciutto.
  14. Cover eggs with 1 tablespoon of hollandaise sauce.
