  1. preheat oven to 325F
  2. slice butter into tbl slices; cut each slice in quarters - cut the butter when its chilled, and chill it again after cutting
  3. toss to coat onion, garlic cloves, apples, and celery with poultry seasoning
  4. fill bird cavities (neck & body) with apple mixture
  5. slice whole between the "tail" and body - fix legs in whole
  6. cutting small wholes through skin under wings, slide wing through wholes - fixing wings
  7. slide cubes of butter between the meat and skin of turkey - evenly distribute them as much as possible
  8. roast turkey - DO NOT REST IN DRIPPINGS! use a rack to lift turkey 1 or 2 inches above drippings
  9. bake until internal temp reads 160F (bake 3 hrs... then check every 30 min until done)
  10. remove entire pan from oven and cover with foil patting bird to make sure the foil is RIGHT on the bird; let rest for 40 min more
  11. remove apple mixture from cavities - mix the apple with your dressing, reserve the rest for your turkey soup!
  12. carve & eat!!
