mug bread pudding

"I was looking for a recipe for fast and easy bread pudding made in a mug... and could not find it - even on the web, which surprised me! So I found a few recipes, combined them and tweaked it to what I wanted. OMG SO GOOD!! It was hard to just eat one mug! So here is my recipe."

  1. preheat oven to 350 deg F
  2. beat the eggs until uniform
  3. add milk, spices & sweetener; beat to uniformly combine
  4. add bread cubes and fold until the bread is saturated and mushy, and most of the liquid is absorbed
  5. spray 4 mugs (or similarly sized ramekins) with non-stick spray
  6. gently spoon (DO NOT PACK!) bread into the mugs
  7. set mugs in 13x9 baking pan
  8. pour tap water around mugs into pan to create a water bath
  9. bake for 25 min
  10. enjoy at ROOM TEMP
