  1. Pre-heat griddle to 350 or skillet over medium heat.
  2. Combine the flour, baking soda, baking powder, and sugar in a large bowl.
  3. Break the egg into a 4-cup measuring cup, add the buttermilk, and mix thoroughly.
  4. Add to the flour mixture and beat with a whisk or mixer until smooth. Batter should be of a pouring consistency.
  5. Stir in the melted butter or vegetable oil.
  6. Spray griddle or skillet with non-stick spray or butter.
  7. Using a 1/4 measuring cup, pour batter onto the hot griddle, leaving an inch between cakes to allow spreading.
  8. Place blueberries, chocolate chips, bananas, or any fruit into uncooked batter.
  9. Once bubbles begin to form, flip pancake and finsih cooking until browned.
