Original recipe yields 12 servings

  1. Preheat oven to 350 degrees
  2. In a medium bowl sift flour, baking soda, baking powder, salt, cinnamon, and allspice. Set aside
  3. In a large bowl, cream the shortening, brown sugar and white sugar until fluffy.
  4. Add eggs and vanilla until well combined.
  5. Add flour mixture to wet ingredients and stir until just combined.
  6. Add oatmeal. Mix well.
  7. Place a 2 rounded Tbsp. of the cookie mixture 4" apart onto (2) ungreased or parchment lined cookie sheets. About 6 per sheet.
  8. Bake 10 - 12 min. or until edges are golden brown.
  9. Cool on cookie sheet for 1 min. then transfer to a wire rack to cool completely.
  10. Store in an airtight container.
