Quick and Easy Refried Beans

"Need a quick base for quesadillas, burritos, or enchiladas? Or what about a quick party dip? This fast, flavorful and easy recipe tastes delicious and better than the average canned beans. For extra texture, reserve some of the beans and mix them in whole at the very end. For thinner beans, add water in step 4 until the desired consistency; Amplify the heat by adding extra hot sauce."

  1. In a small skillet, heat 2 tsp. of the olive oil. Add garlic and onion and saute until soft, about 3-5 minutes.
  2. Add tomato and saute another 2-3 minutes, until tomatoes begin to soften and break apart.
  3. Add hot sauce and cumin and saute 1 minute more, stirring constantly.
  4. Combine beans, cooked vegetable mixture, salt and pepper, and remaining oil in a food processor. Puree until mostly smooth. Adjust seasoning, and serve!
