Tilapia in Tomato Sauce


"This is a delicious recipe that I whipped up one day in pursuit of adding more flavour to my tilapia dish. You can also substitute basa fish for tilapia. I haven't tried any other fish with this recipe, only tilapia and basa and it has turned out to be a success. I guess you can try other fish in this recipe and let me know!"

  1. Marinate the tilapia with 2 tablespoons of olive oil, seafood rub, and lemon juice. Put it aside.
  2. Saute the minced garlic in a frying pan with 2 teaspoons of olive oil on medium heat for about 10 to 15 seconds. Stir in the tomatoes, basil, dill, salt and pepper, and cayenne pepper. Cook the tomatoes till they soften or when the water consistency has been reduced by about 30%.
  3. Add the tilapia fillets by placing them on top of the tomato sauce and let it cook on medium heat. You can cover the tilapia with the sauce by spooning the sauce over it from the sides.
  4. Cook till the fish flakes. Serve with hot white rice or basmati rice.
