  1. Over medium-high heat, melt butter in a 5QT stock pot and saute celery until tender, about 3-4 minutes.
  2. Stir in garlic and heat about 1 minute, take care not to burn.
  3. Add onion, chicken base, chicken breast, and water. Bring to a boil, then reduce heat to simmer over low-mid heat.
  4. Simmer until chicken breast are cooked through. Remove chicken breast from the pot and set aside to cool.
  5. Whisk in milk and potato flakes until smooth.
  6. Add cheese and stir until melted and smooth. Add corn.
  7. Shred chicken breast with a fork, and season with cumin, pepper, cayenne. Return chicken to pot.
  8. In a skillet over medium high heat, cook kielbasa until edges brown and darken.
  9. Add kielbasa to chowder. Serve with tortilla strips or saltines.
