Nanny Bugg's Squash Casserole


"My former grandmother-in-law made this recipe for every big family gathering. I loved it so much and constantly asked her for the recipe. Just before she passed away, she wrote down all her "secret" recipes and gave them to me. I honor her by sharing her version of squash casserole; in my opinion the best squash casserole."

  1. Preheat the oven to 350 degrees. Cook the diced onion on medium to medium-low heat until translucent, stirring occasionally. Meanwhile, slice the squash approximately 1/4 inch thick.
  2. Place sliced squash into a large pot and cover with water. Boil the squash until tender. Drain well.
  3. Mash the squash.
  4. Place the squash in a large bowl and add the cooked onion, beaten egg, sugar, salt and peeper, mayonnaise, 1/2 cup of Ritz crackers, and 1 cup of shredded cheese. Mix well.
  5. Pour mixture into a lightly greased casserole dish. Sprinkle with 1/2 cup cracker crumbs. Sprinkle with melted butter.
  6. Bake for 25 - 30 minutes. Sprinkle with 1/2 cup shredded cheddar cheese and bake for an additional 5 minutes.
