  1. Preheat oven to 400 degrees. Place halved and seeded squash cut side down on a greased pan. Bake for 40 minutes. Remove and set aside. Reduce heat to 350 degrees.
  2. Boil water in a pot. Add couscous and remove from heat. Cover with lid.
  3. In a pan, cook sausage patties until done. Remove.
  4. Add butter and onions to pan. Saute until onions are browned.
  5. Add zucchini and apples, saute until tender.
  6. Dice sausage and add to pan to heat.
  7. Add garbanzos, cranberries, couscous, sage, and thyme to the pan.
  8. Flip squash over and stuff them with the stuffing from the pan. top with cheese. Bake for 20 minutes.
