"This is a perfect summer main dish salad or a great winter salad to serve with a warm soup. Can be modified to be made with crumbled turkey bacon and balsalmic vinegar if you are saving calories."

Original recipe yields 8 servings

  1. Combine first six ingredients and toss to coat. Place in a single layer in a pan and roast at 400 for 30-40 minutes.
  2. Meanwhile, cook bacon in batches reserving 1/2 drippings. Whisk oil and next 6 ingredients into drippings and cook over medium heat for 3-4 minutes.
  3. Combine greens and parmesean, if desired. Add warm dressing and toss well. Allow potatoes to cool slighly then top greens with potatoes and crumbled bacon.
  4. *If avoiding bacon dressing whisk balsalmic, oil and toss with greens. Crumble precooked turkey bacon over all and serve.
