  1. In a small bowl combine herbs (except broth), use a basting brush and coat the outside of the bird. Put the slabs of butter with some of the marinade and coat under the skin of the breast. Let the bird marinate overnight -
  2. Add celery carrots and fresh thyme in the cavity, pour the chicken broth in the bottom of the pan and insert a thermomater 2/3 the way in the thickest part of the breast. Roast at 325 degrees for 3-3.5 hrs. When the temperature reaches 175 degrees take it out and cover with foil for 15 minutes. Let stand another 15 minutes before carving
