Preheat oven to 350F. Wipe off pork with paper towels. Combine salt, pepper, thyme and nutmeg and rub over surface of roast. Place fat-side up in a shallow roasting pan.
Arrange carrots, onions, potatoes, cloves, parsley, bay leaves and garlic around roast. Pour broth and water over. Sprinkle with gingersnaps. Roast 2 hours, basting with pan juices. Sprinkle lemon juice over and roast 20 min more.
The pan juices from this roast make a fantastic gravy.
