Original recipe yields 8 servings

  1. Lightly grease bottom of 9 x 5 loaf pan. Line bottom and sides with parchment paper. Lightly grease paper.
  2. Sift together flour, baking powder, salt. Set aside.
  3. Beat eggs until thick and piled softly.
  4. Gradually add sugar to eggs, beating after each addition.
  5. To egg mixture, blend walnuts, dates, cherries and semi-sweet chocolate pieces.
  6. Add dry ingredients to egg-fruit mixture in thirds mixing only until blended.
  7. Turn batter into prepared pan.
  8. Place a shallow pan containing 2 cups of water on bottom rack of oven.
  9. Place cake on next rack above water and bake at 300F for 1 hour 45 min.
  10. Cool cake on rack 10 min before removing from pan. Peal off parchment paper.
  11. Using a pastry bruch, paint cake with brandy or apple cider. Wrap tightly in waxed paper then aluminum foil, or fruitcake tin. Store in cool place to age for 10 days before serving.
