"This Spanish rice is fluffy and is not too dry or too wet. It is so easy to make. If you grew up in Southern Colorado you will like this simple recipe. The rice is a side dish that does not overpower the spicy Mexican food entrees I serve."

  1. Blend tomatoes in a blender. Finely chop the onion. Set aside. Heat the oil in a large pan.
  2. Add rice to the pan and stir frequently, until the rice is a nice golden color. Do not leave unattended. Reduce heat to low and add blended tomatoes, and stir constantly and simmer for about 1 minute.
  3. Add salt, garlic salt, and water. Bring to a boil and cover.
  4. Reduce heat to low and cook with a lid on until ricer is fluffy and dry. Do not stir rice except to check for dryness.
