"My own recipe that I use to get rid of ingredients that are about to go bad. It uses old wine to simmer vegetables in instead of using stock or broth. This is a great recipe to start before you go to work, and leave it on low heat until you come home from work. Great to freeze the leftovers."

  1. Place chopped carrots, onion, celery in the crock pot. Cover the vegetables with the wine. Mix oregano, basil, and garlic powder to the vegetables. Place crock pot on high heat, to cook off some of the wine.
  2. Stir in the tomatoes, green beans and pinto beans.
  3. Add oil and water to cover the vegetables.
  4. Let the crock pot stay on high heat to get the contents up to a safe temperature. (>140°F)
  5. Reduce heat to the low setting on the crock pot. Keep the crock pot on low heat for 6-8 hours. Great to make before work, and it will be ready when you get home!
