Memories of a Childhood Beef Stew


"Growing up, I remember my mom making this stew often. Measurements were never used, so the stew was always a bit different, but always good. Mom swore that the specific brand of canned vegetables made a big difference, but that the wine didn't. You decide! note: these directions are for the crockpot. Mom often did the same recipe on the stove at low heat."

  1. Add beef to crockpot. Pour in the wine and mix, making sure beef is all covered by the wine. Top with onions. Cover and let cook on low 2-3 hours.
  2. Add the "juice" from the cans of vegetables and stir. Add the potatoes and carrots. Cover and cook another 2-3 hours or until tender.
  3. Add the peas and corn, stir well. Cover and cook 15 minutes.
  4. Serve. Great with Crusty Rolls on the side.
