Baked Ham and Eggs

"After getting a similar dish at brunch one day, I experimented until I found the amazingly easy and tasty way to make this breakfast/brunch dish. Recipe is for two (as that is who I cook for) but just use a bigger pan to make for as many as needed and just cook longer! Very flexible recipe, you can increase or decrease the meat and cheese to suit your taste or diet!"

  1. Preheat oven to 350.
  2. Take two small loaf pans (I use 1.5 inches by 3.5 inches) and grease with butter or spray lightly.
  3. Place 2 slices of ham in each pan - enough to cover the bottom and around halfway up the sides.
  4. Follow with 2 slices of Swiss in each - also covering the bottom and around the side.
  5. Crack 2 eggs into each pan.
  6. Add scallions to the top - but don't mix it.
  7. Throw on the salt and pepper.
  8. Tear up the remaining slice of cheese and place pieces on the top.
  9. Put into the oven and cook for 15 minutes - or until the eggs are no longer jiggly.
