Grilled BBQ Chicken Nachos


"This is a very simple and surprisingly flavorful recipe for smoked nachos prepared on a charcoal grill. The chips, cheese, and beans really soak up the smoke flavor in just a few minutes. Smoke is the most important ingredient, so a charcoal grill is required (unless you can use wood chips in your gas grill). We usually serve it as an appetizer, but it is often requested as the main dish."

  1. In medium-sized mixing bowl, coat chicken breasts in olive oil, sprinkle with chili powder, and turn to combine evenly.
  2. Setup grill for indirect grilling. Sear chicken breasts over high heat and finish cooking over indirect heat on covered grill.
  3. Cut chicken breasts into 1/2-inch cubes and coat evenly with BBQ sauce in small bowl.
  4. Arrange tortilla chips in single layer on grill tray, cast iron griddle, or disposable foil pan.
  5. Sprinkle black beans and 1/2 of cheese over tortilla chips.
  6. Add second layer of chips.
  7. Arrange chicken breasts on top of chips and cover with remaining cheese.
  8. Top with jalapeno slices.
  9. Add wood chips to charcoal and smoke nachos over indirect heat in covered grill for 5-10 minutes until cheese is melted. Rotate at least once to make sure chips are evenly cooked.
