Aunt Evanthia's Stewed Beef & Onions (Stifado)


"My very first boss gave me this recipe back in 1971. Bobbi was a fabulous cook and hostess. She served this wonderful stew at her New Year's Day Open House every year. I'm reminded of her when I make this, which is often. Originally the recipe was prepared on top of the stove. I've adjusted it for the slow cooker."

  1. Turn slow cooker on high and add butter.
  2. When butter has melted, turn cooker to low. Add beef (do not brown) and stir. Place bay leaf on top of beef, put onions on top. Do not stir.
  3. Mix together tomato paste, water, brown sugar, vinegar, salt and pepper. Pour mixture over onions. Do not stir.
  4. Cover and cook on low 8-10 hours.
  5. Cook carrots separately and add to stew.
  6. Remove bay leaf, stir, serve and enjoy!
