  1. 1) Grate all cheese with a coarse setting
  2. 2) Mince garlic finely
  3. 3) In small dish, combine cornstarch and kirsch. Stir into paste and set aside.
  4. 4) Simmer wine and garlic over medium heat in large sauce pan.
  5. 5) Slowly add 1/2 c of cheese at a time. Do not let cheese boil. Do not stir in a continuous circlular pattern or cheese may clump into a ball.
  6. 6) Continue to stir slowly with random stir pattern, to make sure cheese is dissolved.
  7. 7) Add cornstarch mixture and nutmeg to fondue.
  8. 8) Simmer and stir until thickened, 8-10 minutes.
  9. 9) Pour into fondue pot and eat immediately.
  10. 10) Cut french bread and serve fondue with bread and red potatos (boiled) for dipping into fondue.
  11. 11) Serve onions and cornichon as garnish.
