  1. Tomato Sauce
  2. In a 4 qt saucepan, heat the oil and saute onion for 3 minutes.
  3. Add all BUT parsley and simmer 30 min. Add parsley and cook 15 minutes. Cool to use.
  4. Parmesan Garlic Sauce
  5. In a 3 QT saucepan, melt butter, add garlic and saute 1 minute. Add the flour and whisk until smooth. Allow flour to bubble for 2 minute and add the milk slowly. Whisk until smooth and thick. Add the salt, Tabasco, nutmeg, and cheese. Whisk until the cheese is melted.
  6. In a large mixing bowl, combine the spinach, chicken and parsley.
  7. In another bowl beat together eggs, ricotta, 1/2 c parm, salt and pepper. Fold into Chicken mixture.
  8. Layer in a 9X13 sprayed baking dish-
  9. 1 c tomato sauce
  10. 4 lasagne noodles(cooked to package instruction)
  11. 1/3 chicken mixture
  12. noodles
  13. 1c tomato sauce
  14. chicken mixture
  15. 1/2 remaining parmesan mixture
  16. noodles
  17. last chicken mixture
  18. noodles
  19. parmesan sauce
  20. Bake for 45 min until bubbly...
