  1. Place a cooling rack (the kind you'd put cookies on) on a rimmed baking sheet.
  2. Slice zucchini into 1/4 inch coin.
  3. Place flour in one bowl, lightly beat the egg in a second bowl, and combine the other ingredients into a third bowl
  4. Dip the coins into the flour, then tap off excess. Coat with egg, then coat with bread crumbs. Place on a cooling rack. Repeat until you've used all the coins
  5. Coat each coins lightly with cooking spray if desired for extra crunch
  6. Bake at 450 for 20 minutes or until crispty and golden.
  7. Let cool slightly, then serve with catsup for dipping if desired.
