Terry's Lemon Caper Chicken


"Affectionately referred to as "flat chicken" by my family, this recipe is a favorite! My mom would make it once a week and now my kids and I carry on the tradition. It is flavorful, easy and goes well with rice or pasta."

  1. 1) Beat eggs and pepper together.
  2. 2) Pound chicken breasts with a mallet until they are 3/4 inch think. Cut into reasonable serving pieces.
  3. 2) Dip flat chicken peices in egg mixture and then coat with breadcrumbs
  4. 3) Fry in shallow pan with olive oil
  5. 4) When chicken is cooked on both sides, take off stove.
  6. 5) Drizzle on tiny bit of caper juice, then top with capers and lemon wedge before serving.
