  1. 1) Preheat oven to 350 degrees.
  2. 2) seperate 3 eggs. Set aside egg whites. Beat 3 yolks together and set aside.
  3. 3) Zest and juice lemons
  4. 4) mix 3/4 cup of sugar, all flour, all cornstarch, all water, lemon juice, lemon zest in a saucepan and bring to boil.
  5. 5) Once boiling, slowly whisk in butter and egg yolks.
  6. 6) bring to boil again, then remove from heat.
  7. 7) Fill mini graham cracker crusts with lemon filling and set aside.
  8. 8) To make meringue, blend egg whites with remaining 1/4 c sugar and almond extract until stiff.
  9. 8) Frost 1 inch meringue onto mini pies, making sure to make peaks which will brown in oven.
  10. 9) Bake at 350 for 10 minutes until peaks are golden brown.
  11. 10) Cool and serve.
